Kolbulle

Kolbulle, (coal bun), is an old swedish meal for the campfire.

It was the staple food for loggers, navvies and charcoal-burners, that often moved around and had a need for food with loads of energy while simultaneously having a long shelf life since they often lived in short term huts.

Later it has become a favourite among swedish scouts and outdoor people since it's both delicious and easy to cook at the campfire.

I usually mix my batter at home and bring it in a plastic soda bottle. If you pre-mix it you wont need any water for this recipe, except for the washing up.

If you can’t find Lingonberries then Cranberries can work as a substitute in a pinch.

Recipe, 1-2 servings:

  • 1 dl all purpose flour

  • 1 1/4 dl water

  • 100 gram cured pork belly

  • Butter or lard for frying

  • Lingonberry jam

  • Mix flour and water to a smooth thick batter and let it rest for at least 30 minutes

  • Dice the pork and fry it until golden

  • Cover the pork with batter and fry for 3-5 minutes on each side

  • Serve with lingonberry jam
