Farmers breakfast

You’ll find similar recipes from different countries but this variety has its origin in Germany.

According to tradition this is what a German farmer had for breakfast to get energy for a days labour on the farm and it might contain basically any leftovers. but the typical recipes call for onions, boiled potatoes, meat and eggs. I went with cured pork belly for this and boiled potatoes to save some cooking time. It’s a one-pan-dish and I chose to eat straight from the pan to save some washing up. It’s suitable for the campfire or any cook set that can take a fry pan. It takes about 15-20 minutes from start to finish.

Recipe 1 Serving:

  • 1 small onion

  • 2 strips of cured pork belly

  • 1½-2 egg sized boiled potatoes

  • 2 eggs

  • 1-2 tsp of butter for frying

  • salt, pepper

  1. Dice the onion, pork and potatoes

  2. Pre heat the pan to medium heat, add the butter

  3. Add the pork to the pan when the butter turned light brown. Render out the fat from the pork for a minute than add the onion. Fry until the onion is soft, 2-3 minutes.

  4. Add the potatoes and fry for 3-4 minutes, stirring every now and then. Salt and pepper to taste

  5. Whisk the eggs and pour over the pan. Lower the heat and cook until the eggs have set. Bon appetite!
