Pasta with creamy tomato sauce
This is a dish heavily influenced by the Italian kitchen with things you probably already have in your pantry. Very little food preparation is needed and you’ll have a delicious meal within 20 minutes.
Ingredients for 1 serving:
1 tsp olive oil
1 tbsp butter
½ onion diced
3 garlic cloves finely diced
1 tbsp tomato paste
2 tbsp creme fraiche or cream
40 grams parmesan finely grated
Oregano, thyme & rosemary
Salt & black pepper to taste
1 heaping cup pasta of your choice
Boil the pasta two minutes short of ready, put to the side in the water.
Dice the onion and garlic.
Add the oil and butter to a fry pan, preheated to medium high. Add a pinch of salt and fry onions until soft.
Add the tomato paste and fry for 2-3 minutes.
Add the cream/creme fraiche and a few tablespoons of the pasta water, stir until incorporated.
Add the pasta and the parmesan cheese and let it all simmer for a couple of minutes until you have a creamy sauce that cling to the pasta. Stir every now and then. Add more pasta water if needed.
Plate up. Grate some more parmesan over for luck. Bueno apetito!
